My favorite thing at Starbucks (besides the coffee.....) is their bacon gouda breakfast sandwich. It is the ONE thing I get on every road trip. A must-have EVERY TIME.
The ciabatta roll is perfection. The gouda is melted perfectly with the egg and into the roll.
And the bacon?
Bacon is my love language.

I'm also a frugal gal. I hate spending money on things we don't REALLY need so (of course) I set out to make these delightful sandwiches at home. When I ran across these ciabatta rolls at Aldi one day, I knew exactly what I was going to use them for.
My family LOVES breakfast sandwiches. I hate buying them pre-made. Even from Aldi, they are expensive!
So I am always on the hunt for nutritious, protein-filled breakfast ideas that fill the people without making us go broke.
These sandwiches are amazing. Change your life good. Trust me.
After you cook the bacon, you can whip them up in about 10 minutes. I make a little assembly line. The ciabatta rolls are big, so you can get away with cutting them in half for little kids (and some adults!). Your teenagers will eat a whole one. Trust me on this!

Gather up all your ingredients
1 Package of Ciabatta Rolls
2 Eggs
2 Slices of Bacon
Gouda (smoked Gouda works as well)
We found these amazing Ciabatta sandwich rolls at our local Aldi. Seriously, there is so much you could make with these bad boys. Prepare yourself. They are pre-sliced and freeze like a dream!
We use the Appleton Farms sliced bacon all the time. We love it!
The smoked Gouda is in the refrigerated section by the deli meats. Under the packaging, it is wrapped in red wax. Don't be alarmed. Take a small knife and carefully cut the wax off. Once you get going, it will come right off! The Gouda is underneath!
First up, cook your bacon. We use 2 slices of bacon per sandwich. I like to cook bacon in the stove when I have time. Frying it on the stove works too. Use a cool pan and place your bacon in it. THEN, turn the heat on. Bacon cooks up wonderfully this way.
We like to toast our ciabatta while the eggs are cooking. Go ahead and throw some butter on your rolls after they are toasted. Just a little bit is fine! I figure this is what the Pioneer Woman would do.
Scramble two eggs on low. The trick to this sandwich is the keep the eggs from drying out. Do not cook them too long! Cook 'em low and slow.
We don't add extras to our scrambled eggs at our house. No milk, no salt and pepper. Just eggs with a little salt and pepper at the end. Trust me on this.
Once your eggs are cooked, place them on one side of your Ciabatta bread. Place a slice of gouda on your eggs. Microwave this for about 15 seconds. You want your Gouda to melt into your eggs. SO. AMAZING.
Top with 2 slices of bacon the top of your Ciabatta roll. Slice in half if you wish.
Bacon Gouda Breakfast Sandwich
makes 1 sandwich

Cook 2 slices of bacon. Let it sit on paper towels to drain while you cook your sandwich.
Toast your ciabatta roll. Lightly butter the inside of your roll.
Scramble 2 eggs. Cook them on low until done. Don't overcook!!
Place eggs on bottom side of Ciabatta. Place a slice of Gouda on top of eggs. Microwave for about 15 seconds or until Gouda is melted.
Place bacon on top of egg and cheese mixture. Top with roll.

You can pre-make these sandwiches and wrap them in plastic wrap. Put them in the fridge for a quick breakfast option! They make a great frugal option for busy mornings!
