I have to admit to you, I was skeptical about the instant pot. A few years ago, everyone was getting one and I wasn’t so sure I needed one.

I don’t like clutter. My kitchen cabinets are small. I don’t like to own a lot of small appliances.

My slow cooker has been the workhouse of our family. It has seen us through football season and basketball season. I was sure we didn’t need another thing cluttering up this space.

But then, my mother bought me one. I have this one if you are curious. It showed up on my doorstep last spring. I had no clue how to operate it. Honestly, I was afraid it was going to blow up or something.

Brad was the one to start using it first. He made rice and cooked an amazing pork roast in it!

I’ve been learning how to use the instant pot too. With very little effort and time, I can get dinner cooked and on the table fast. I don’t have to prep it all in the morning like my crockpot. I can come home from the after school carpool shuffle and have dinner cooking while I go out and finish shuttling kids around.

Heck, even my teenagers can use it to start dinner!
